Grandma Jo's Spanish Rice

This has been a favorite of ours for many years! It's an easy one pot weeknight meal, yet it's "from scratch", not rice mix from a box where you throw your add in's in at the end. I do not like black olives, but that's just me, and I use them anyway because the blend of everything together is sooo good. Enjoy!


Oh and it's gluten free, dairy free, soy free, antibiotic/hormone free

Ingredients:


  1. 3 oz black olives cut into rings

  2. 1/2 Onion minced

  3. 2 tsp Adobo

  4. 6 Sweet or Hot Sausages cut into pieces

  5. 3 oz Pepperoni cut into chunks

  6. 1 can corn

  7. 2 cans small tomato sauce

  8. Olive Oil for saute

  9. 4 1/2 cups water

  10. 2 cups white rice


Directions:


  1. Heat Oil to Pot or Dutch oven and cook sausages

  2. Take sausage out. Cook onions, pepperoni, olives with Adobo in pan.

  3. Add sausage back in and cook about 10 minutes

  4. Add tomato sauce and and corn and simmer about 10 minutes.

  5. Add 4 1/2 cups water and bring to a boil

  6. Add 2 Cups of Rice.

  7. Cook covered about 20 minutes or until liquid is absorbed. Enjoy!
